These vegan brownies are gluten-free and made with beneficial ingredients like coconut oil, flaxseed, and peanut butter.

🥘 Ingredients

3 tablespoon flaxseed meal

¼ cup water

⅔ cup + 2 tablespoon non-dairy milk

⅓ cup peanut butter

⅓ cup melted coconut oil

1 ¼ cup all-purpose flour, spoon and level

⅓ cup vegan chocolate chips

½ cup unsweetened cocoa powder

1 ⅓ cup sugar

¼ teaspoon salt

3 teaspoon vanilla extract

🔪 Instructions

Preheat the oven to 350F. Prepare a 9’’ x 13’’ baking pan with parchment paper. Set it aside.

Add the flaxseed mixture into a large mixing bowl. Add non-dairy milk, vanilla extract, peanut butter, melted coconut oil, and sugar. Whisk well after each addition.

In a separate bowl, combine all-purpose flour, baking soda, cacao powder, and salt.

Add the flour mixture to the wet ingredients and stir until well combined.

Sprinkle chocolate chips on top of the brownie.

⏲️ Baking Time

Bake for 18 to 20 minutes, or until the center is set. Longer baking results in a moist but spongy brownie, and shorter baking in a fudgy texture.

Let the brownies cool completely before serving.

  • Add flour mixture to the wet mixture and stir until well combined.
  • Pour brownie batter into the prepared pan.
  • Sprinkle chocolate chips on top of the brownie. Bake for 18 to 20 minutes, or until the center is set. Longer baking results in a moist but spongy brownie, shorter baking in a fudgier brownie.
  • Let it cool completely before serving.
